Zucchini Lasagna

This is a really simple yet delicious recipe.


3 Large Zucchini shaved with cheese slicer

1 bunch of Spinach cooked with

1 Onion and 4 cloves of Garlic add in Olive Oil.

250 grams of  Ricotta  Cheese and a jar of Organic Tomato Sauce

Lay  Zucchini slices in a Olive Oiled lasagna dish,  layer with Spinach mix ,  and top with remainder of Tomato Sauce and cook for 25 minutes at 200C.

Top with some Nimbin grated cheese and bake a further 10 minutes.

Serve with a delicious  salad.
